3-4 ripe peaches
3 tbsp. white sugar
1 C. GF muslix like cereal (this is for the filling)
1/2 tsp vanilla
1/4 tsp ceylon cinnamon
3 tbsp. apricot jelly
2 dried peaches (diced)
1 dried apricot (diced)
3 tbsp. brown sugar (for the topping)
1/2 C. muslix cereal (GF) (topping)
Cinnamon to taste (topping)
This is a quick and easy way to make peach crisp
Halve the peaches and remove the pits. Peel the peaches, and then slice into pieces (like apple pie) and then take the slices and dice these. Add all ingredents except for the topping ingredents), allow to combine together. You don’t need corn starch or flour if you use the cereal/oatmeal in the filling as it performs the function.
For the topping just combine the sugar muslix and cinnamon (I tend to be light since the peach is VERY deliccate in flavour). Preheat an oven to 350 degrees. Cook until done (approximately 35-45 minutes), topping should be brown and crisp, and a little peach should bubble around the side.
